1. Begin with rice or porridge
Let a little ghee melt into hot rice or stir it through porridge. Familiar food is an easy place to get to know its rich, nutty flavour. Start with a small spoonful and adjust to taste.
2. Give spices a warm start
Warm whole spices in ghee until fragrant, then build the rest of your dish. You can also spoon the tempered spices over a finished dal. This is the cooking idea behind tadka: let the ghee carry the fragrance into the food.
3. Roast or baste
Coat vegetables before roasting, or brush mushrooms and mielies at the braai. Ghee brings richness to foods you already enjoy, without needing an entirely new recipe.
4. Finish with a little richness
Add a dollop to hot soup or dal, or spread a little on warm toast, roti or flatbread. Taste as you go and let your meal decide how much it needs.
